Aubergine Pizza - Low Carbs

Well hi there, I am back and I am here to stay. Esther is now 6 months and she is such a big baby and it is so sweet to see her having her first times. With her turning 6 months I've decided to finally shed the baby weight.
I really thought I would come back from would come back from pregnancy with 15 kg to lose but breastfeeding does miracles and I only end up with 5 kg to drop.

I did my research and discovered the LCHF diet. Low Carbs, High Fat - there's an actual science behind this diet which was important for me. I wanted something that works and that could actually commit to and you don't have to starve yourself.
Among the many low carbs dishes that I have enjoyed, the Aubergine Pizza is one of my favorite.

What you will need:
  • 2 Aubergines
  • Bacon pieces
  • Tomato puree
  • Pizza herbs
  • Olive oil
  • Garlic
  • Olive
  • Grated Cheese
What to do:

Slice the aubergines, just a little thinner than 1 cm. Mix olive oil, herbs, and garlic. Spread the oil mixture over the aubergine. In a bowl, mix tomato puree and bacon and spread over the aubergine. Add cheese on top then the olives. In this case, I also added some Gorgonzola.

Bake for 20 mins.
